Recipe: Kale, avocado and pomegranate salad

So I'm roughly 6 weeks into my healthy eating regime and am feeling so much better! However, the hardest part is finding different meals I can cook, so Deliciously Ella's site has been a godsend.

I have been using kale loads lately, not least because it's stocked in Lidl!

This is my new favourite recipe: quick, easy and surprisingly delicious:

1 Big Serving:


  • 4 big handfuls of kale
  • 1/3 cup of pomegranates
  • 1 ripe avocado
  • A handful of pumpkin seeds (I use sunflower seeds or even pine nuts if I can't find)
  • 1 tbsp olive oil
  • 1 teaspoon of tahini
  • 1 teaspoon of apple cider vinegar
  • 1 teaspoon of tamari
  1. Wash the kale and pull off the stalks.
  2. Put it all in a bowl and then serve!

The easiest meal ever? Possibly...and it tastes amazing ('Im a changed woman).

  1. I've got to do a healthy eating "thing" at the end of Jan. My friend owns a cafe in Canterbury which also does cookery classes called |Kitch and I have to take part in a plan because she will kill me if I don't sign up! I do a couple of her recipes now so thanks for something else I can make! x
