So I'm roughly 6 weeks into my healthy eating regime and am feeling so much better! However, the hardest part is finding different meals I can cook, so Deliciously Ella's site has been a godsend.

This is my new favourite recipe: quick, easy and surprisingly delicious:
1 Big Serving:
- 4 big handfuls of kale
- 1/3 cup of pomegranates
- 1 ripe avocado
- A handful of pumpkin seeds (I use sunflower seeds or even pine nuts if I can't find)
- 1 tbsp olive oil
- 1 teaspoon of tahini
- 1 teaspoon of apple cider vinegar
- 1 teaspoon of tamari
- Wash the kale and pull off the stalks.
- Put it all in a bowl and then serve!
The easiest meal ever? Possibly...and it tastes amazing ('Im a changed woman).
